what i ate: a lot of seafood.

it's wednesday and that means it's time for another round of what i ate! I've been eating according to the fit girls guide, and i've never felt better. I really love this style of clean eating and portion control. I look back at my days of eats and feel pretty great about it. let's get to it!

wiaw overnight oats blueberry

our breakfast staple of overnight oats. these are actually shaun's jars, topped with blueberries. I go for the frozen cherries in a flat container and, well, they just don't look as pretty. I layer old fashioned oats, chia seeds, milk, 2% greek yogurt, honey, almond butter and fruit. so good.

for lunch, I had run out of my prepped meals, so I picked up this absolutely gorgeous sushi. it was so so so good. I'm dreaming about it right now.

I was in a snacky mood by mid-afternoon, so i popped on down to starbucks for a flat white. it's filling, highly caffeinated and satisfying. perks of now working in midtown, there is literally a starbucks on every corner.

thai stir fry1

I decided to prep a big dinner that would last 2 nights. while I cooked, I snacked on some leftover cauliflower cheesy bread. for dinner, I went with thai shrimp stir fry, a recipe from the fit girls cookbook. this was soooo good. I sauteed shrimp, a bag of frozen veg (broccoli, snow peas, carrots and water chestnuts) and peanut sauce in a pan, then pour over a bit of brown rice. this will be a new staple.

I'm actually not much of a seafood eater, but sushi and shrimp get me every time. this was a rare occurrence of 2 seafoods in one day, and you know what? I liked it.

after dinner, I really wanted something sweet and this has been my new go-to evening snack: rice cake topped with peanut or almond butter and a drizzle of raw honey. it's just sweet and filling enough to satisfy that end of day craving.

and that's about it for this week! I'm working on changing up my meals but keeping that clean eating style, while also portion controlling. I've found that the weekdays are a cinch, while the weekends are always a challenge.

what i ate

it's wednesday! and since i'm still working my way through the fit girls guide, i thought it would be fun to do another what i ate series. 

wiaw english muffin pbb

my go-to has been cherry overnight oats, but on this particular day, i had forgotten to meal prep (aka the worst) and didn't have time to simmer away some oats on the stovetop, let alone eat them while warm. i improvised and went with a whole grain english muffin topped with almond butter, local honey and bananas. #pb&b

that hearty breakfast kept me full for a long while, and through an off-site meeting, but man was i starving by the time i made it home. this was a dinner recipe from the fit girls guide, however, it seemed super easy to whip up a single portion at home for one (working at home for the win!). it's a piece of toast topped with chopped artichokes mixed with Greek yogurt, shredded chicken and a slice of provolone cheese, all microwaved together. this was so different for me, but totally delish!

by snack time, i was feeling ravenous, so i made a fruit plate. chopped strawberries, sliced bananas and a scoop of crunchy pb. i try not to overdo the nut butter since it's a gateway for me, so this was a rare occurrence of having it twice in one day.

for dinner, i've been trying to cook very low-sodium, so i found this easy mushroom topped pork chop recipe. I pan-seared the pork chops in a pan, then removed them. I sauteed the 'shrooms in the same pan, then deglazed with 1/2 C white wine. I brought that to a boil, then added 1 tsp brown mustard and mixed it all together. Pour over the chops! On the side, I made a butternut squash puree mixed with Greek yogurt. Pretty in color, but it wasn't my favorite.

i really wanted a snack, but i asked myself if i was really hungry or just craving something sweet. i decided i wasn't actually hungry, so i just went to bed instead :) i'm trying to work on this more often!

what i ate

I haven't done a what I ate in such a long time and so I'm psyched to share one today as part of my new eating plan.

wiaw overnight oats 3.23.16

For breakfast, I've been loving overnight oats. A huge bowl filled with oats, milk, chia, Greek yogurt, almond butter, honey and fruit (cherries in this instance). Obviously coffee on the side.

I was home on Sunday, so I made some leftovers of sweet potato and mushroom tacos that we had on Friday. I just measured out my 13 tortilla scoops and loaded them up with sweet potato and mushroom filling, a little mozzarella and some guac. These felt like such a treat!

For snack time, I had a hard boiled egg and a cup of strawberries. I made a huge batch of eggs to have for snacks throughout the week - and also for penelope to bring to school for her Easter party today!

And dinner! So many new meals lately which has been a lot of fun. I food prepped like a boss on Sunday and so I had dinner all set and ready to go. I made whole wheat lasagna roll-ups that were filled with ricotta and winter squash purรฉe (just a frozen pack that I defrosted and mixed with ricotta). I then rolled them up and placed them in a small baking dish, loaded them up with tomato sauce and cheese and baked it off in the evening. I served these with a side of roasted, crispy green beans. This dish was a hit!
